The Bikini Cocktail
Yields 10 servings
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Syrup: Place every items in a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, remove from the burner and leave to cool completely. Pour into a sealable bottle, seal keeping it chilled, where it will keep for up to one month.
For the Batch Mix: Combine the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then pass it through preferably using muslin, so it's perfectly clear.
For serving: Add 85ml from the premix into your mixing glass containing ice, and agitate gently for a minute to chill. Pour to a frosted cocktail glass or similar, garnish with a few cranberries and finish using a quick spritz of the essential oil over the top.
